Hi internet! Here is a short post about hot chocolate. This is the best hot chocolate I've ever made. The recipe is adapted from Kitchen on the Cliff.
Ingredients
This makes 2 large mugs of hot chocolate.
-2.5 cups of your preferred milk, split (I used extra creamy Chobani oat milk)
-1 tbsp cornstarch
-3.5 oz chocolate (I like using 72% Ghirardelli bar chocolate)
-2-3 tbsp sugar (recommended: 2 if <50% chocolate, 3 if >50% chocolate)
-4 tbsp cocoa powder
-small pinch of salt
Recipe
First chop your chocolate up into small pieces.
Then prepare your slurry in a bowl: place cornstarch and then 1/2 cup of your milk. Mix with a whisk until there are no clumps. Then add sugar and salt.
Prepare a second bowl with the cocoa powder. Add your slurry into the bowl with the cocoa powder and mix very well, until smooth without any clumps.
Place a pot on the stove and add most of your milk there. Place some in cocoa slurry, mix, and deposit the slurry into the pot. Heat on medium. Whisk until the drink starts to simmer (signs include thickening and bubbles on the edges):
Then add your chopped chocolate and turn off the heat. Mix until the chocolate is completely melted.
Result
This hot chocolate is so incredibly thick and creamy. I used oat milk and it still came out perfect. The balance of chocolate and sugar is perfect. It is very rich, since you are drinking half or a full bar of chocolate. If you have the drink on the stove too long, it will basically turn into chocolate pudding (I've made that mistake).
